When Should I Start Baking?
Traditionally, bakers begin in mid to late October, aiming to have their cakes baked and resting by Stir-up Sunday—23rd November, the last Sunday before the start of Advent. This gives your cake plenty of time to mature and for flavours to develop. If you start with sub-par fruit, no amount of maturing will fix a bland base.
